Is there any way to view your plane in flight like you can with the AC's on ps2? As in using the right analogue stick. I'm sure i did it once but i can't remember how.

Just set you're controls to those somewhat similar to regular and you should end up with something you might like..
But I personally don't do that in 3rd person.. it's screws the realism.. but if it's a cockpit view that's fine..

Is it because they're too afraid to do anything to you physically? Maybe. Not really. Why would they need to hurt you physically, and exhaust themselves quickly, when there are more efficient means of harming you? Efficient, and sometimes even more effective.

I meant circling the camera round your plane.

Hold autopilot then use your analog stick to look around.

Is there a way to take pictures in the game other than with an actual camera?

You need a homebrew app to take in-game screenshots. There are some, but I do not know them. In that, I'd also be glad if someone could awser.
But to have it, you need Custom Firmware on your PSP. If you don't have it, visit specialized sites for information.
